100% Chardonnay, from the outskirts of Azé, in the northern reaches of the Mâcon-Villages appellation. Planted on a steep westerly-facing slope, the fruit keeps it’s acidity, from a cool microclimate and the a soil rich in limestone, resulting in bright, fresh wines. The grapes were pressed, settled and racked, without any additions nor SO2, into large format barrels for a fermentation by the indigenous yeasts.
