100% Chardonnay, from the outskirts of Azé, in the northern reaches of the Mâcon-Villages appellation. Planted on a steep westerly-facing slope, the fruit keeps it’s acidity and the cool microclimate keeps alcohol volume in check.  The white limestone marl is classic Chardonnay soil and the 30-80 year old vines are farmed organically. Macerated with skins for several hour, the juice is deliberately oxidised and racked into mainly old large format barrels.  Wild yeast fermentation and ageing on lees for over 12 months for freshness + further texture.
