Predominantly Merlot, with a dash of Cabernet Franc. Wild yeasts are used, temperature controlled for a gentle extraction, no further pressing after fermentation to minimise tannic structure. No fining, no filtration and low added sulphites. Juicy redcurrants, blackcurrants, sloes; youthful acidity and an easy charm. 12.5% ABV
